Red Lentil Dahl with Charred Broccolini

Ingredients:
2 tablespoons coconut oil
1 yellow onion, diced
3 cloves garlic, minced
1 tablespoon fresh ginger, peeled, minced
2 teaspoons curry powder
1 teaspoon New Chapter fermented turmeric powder
1/2 teaspoon chili powder
2 cups dry lentils, uncooked and soaked
1/2 teaspoon black pepper
1 teaspoon sea salt
1/2 teaspoon red pepper flakes
1 can coconut milk
3 cups of water
1 cup of cooked brown rice, to serve
Charred broccolini, to serve
Fresh cilantro, chopped, for garnish
How to make the Dahl:
Preheat the oven to 300°F.
Heat a large pot over medium heat and add the coconut oil. Add the onion, ginger, and garlic and cook for 5-10 minutes, or until soft and fragrant.
Add the spices, coconut milk, (soaked, rinsed, and drained) lentils, and water to the pan. Bring to a gentle simmer.
Simmer uncovered for 30-35 minutes or until the lentils are soft and the dahl has thickened up, stirring frequently.
Meanwhile, wash, dry, and chop a bunch of broccolini (or broccoli florets).
Place on a baking tray lined with parchment paper and olive oil, season with sea salt and pepper, and bake for 15-20 minutes, or until charred. Rotate occasionally being careful not to burn the broccolini.
Remove the dahl from the heat and serve with cooked brown rice, charred broccolini and garnish with chopped cilantro.
