Coconut Parfait with Seasonal Berries

Ingredients:
1/2 cup Bob's Red Mill GF organic oats (quinoa or amaranth flakes)
1/2 cup mixed berries, fresh or frozen
1/2 cup water or almond milk
1/2 cup vanilla coconut yogurt
1 teaspoon chia seeds
1/2 teaspoon ground cinnamon
1 scoop collagen, optional
Fresh seasonal berries
1/2 banana, sliced
1 tablespoon hemp seeds
Coconut flakes
Cacao nibs
How to make the parfait:
Place all ingredients into a small mixing bowl and pulse using an immersion blender until smooth. Transfer to a serving bowl.
Serve topped with seasonal berries, sliced banana, hemp seeds, coconut flakes, and cacao nibs.
Notes: Experiment with different seasonal toppings.
