Turkey Bolognese with Zucchini Spirals

Ingredients:
1 tbsp olive oil
2 medium onions, diced
2 carrots, trimmed and diced
2 celery sticks, diced
2 garlic cloves, minced
2-3 sprigs rosemary, leaves picked and finely chopped
1 lb turkey mince, 99% fat-free
10 Roma tomatoes, soaked, peeled, and diced
A handful of basil leaves picked and finely chopped, reserve a few leaves for garnish
3 sprigs fresh oregano, leaves picked and finely chopped
2 bay leaves
2 tbsp tomato purée
1/2 cup chicken broth
1/2 teaspoon crushed red pepper
1/2 cup red wine
10 Kalamata olives, roughly chopped
Pink Himalayan salt and fresh black pepper, to taste
3 large zucchini, washed and spiraled
How to make the pasta:
Add olive oil to a large saucepan over medium heat. Add the onion, carrot, celery, garlic, and rosemary. Sauté for 10 minutes, stirring occasionally.
Increase the heat to medium-high, add the turkey mince and cook stirring until the meat is browned all over.
Add the prepared tomatoes, chopped basil, chopped oregano, bay leaves, tomato purée, chicken broth, crushed red pepper, and wine. Stir with a wooden spoon until all ingredients are mixed.
Bring to the boil, reduce to a gentle simmer and cover with a lid. Cook for 1 hr 15 mins stirring occasionally, until you have a rich, thick sauce. Add the chopped Kalamata olives, check the seasoning, and stir.
Meanwhile, heat olive oil in a large pan over medium heat and lightly toss zucchini spirals, for 3-5 minutes or until al dente. Alternatively, the zucchini spirals can be steamed or boiled until tender.
When ready, top the zucchini spirals with the turkey bolognese. Garnish with fresh basil leaves and serve.
Notes: I like to portion and freeze this turkey bolognese for a super-quick midweek meal. Simply thaw in the fridge and heat in a saucepan. This also tastes delicious with Banza chickpea pasta.
Short on time: Skip the scratch bolognese and make with a store-bought version - I like Organico Bello Organic Tomato Basil Pasta Sauce and Michaels of Brooklyn Tomato Basil Sauce, add a handful of olives and garnish with fresh basil.
