Mix and Match Overnight Oatmeal

Cooking Time: 2 hours or overnight

Serves: 1

Method: Soaking

 

Ingredients:

  • 1/2 cup rolled oats

  • 1 tablespoon chia seeds

  • 1/2 teaspoon pure vanilla extract

  • 1/2 cup unsweetened non-dairy milk

  • 1 scoop collagen (optional)

Topping Combinations:


  • Coconut yogurt + seasonal berries

  • Nut butter + banana + honey + hemp seeds

  • Blueberries + almond butter + granola

  • Mango + yogurt + coconut flakes

  • Strawberries + yogurt + pepitas + cacao nibs

 

How to make the oatmeal:


  1. Place the base ingredients into a mason jar or small bowl (with a lid).

  2. Mix together until well combined. Cover and leave to sit in the fridge for at least two hours, or preferably overnight.

  3. Remove from the fridge prior to serving. Stir, adding milk if required, and top with the suggested toppings or experiment with your own seasonal mix.

Notes: I like to make a batch of these overnight oats on a Sunday evening for breakfast during the week. They will keep covered in the fridge for up to one week.
